Four generations hve taught us that local natural products and traditional recipes, are those that have been more fruitful to us, and given the most flavour.
And for that reason the pepper choricero, gathered during the summer in the kitchen gardens, and hung over the balconies to dry, gives that touch of colour to our small villages, and is for us, the fundamental ingredient of our recipes. We soaked the peppers over two days, then it is pulped to extract the wonder of its meat, rejecting stems,pips and skin. This ingredient gives the unmistakable characteristic aroma and flavour of the traditional elaborated Basque pork.
